Look for raspberries that are intact, dry, and bright colored. Raspberries are unique because each raspberry is made of individual drupelets that grow around a central core that stays on the plant when the raspberry is picked. That’s why raspberries are hollow!
Raspberries are very delicate, particularly when used in deserts and cooking.
Try not to wash raspberries; if you must, do so right before consumption. Otherwise the drupelets absorb water, get soft, and the berry’s structure begins to weaken. Refrigerate raspberries until the time of use.
